CINC-OH YEAH!

FELIZ CINCO DE MAYO

Happy Cinco to you all!! In our house, Mexican food is a multi-night feast! Mexican food is food that my kids will eat anytime and anywhere. From quesadillas to burritos, we just gobble it up, to put it mildly. This past week I fixed two new mexican-inspired dinners, and in the spirit of Cinco, I wanted to share them here, but first, I just have to share this sweet, funny picture of Nataleigh who was clearly done with grocery shopping! Gosh, I love my babies!! #shegone
Now, onto the food!

ENCHILADA LASAGNA

Two of my favorite things..enchiadas and lasagna..together in one delicious dish! I found this dish on pinterest HERE! It was so easy to fix. I bought a rotisserie chicken that I shredded and then layered between corn tortillas, cheese, and enchilada sauce! Finally bake it until it is golden and bubbly. I served it with refried beans and typical taco toppings; lettuce, sour cream, extra cheese. ENJOY!

TACO CASSEROLE

I just threw together the ingredients in our normal tacos into a 9x13 dish & baked it together until bubbly. First I started with warmed refried beans. Then I added a layer of my favorite shredded Mexican cheese & seasoned taco meat. (I always use 93/7 ground sirloin). I added another layer of shredded cheese, and then I drizzled the entire bake with taco sauce. (Ortega mild sauce). I served again with typical taco fixings in these super cute boats.

KEY LIME TARTLETS

I followed the directions on the bottle of key lime juice, and I just baked them in mini graham cracker pie shells. My kiddos loved having their own mini pies, and they are just adorable. Joe, however, would have rather me just bake it in a traditional 9-inch pie pan. Either way these super tart pies balance the spicy Mexican food perfectly, even if they aren't a traditional "Mexican" dessert.
Have you seen this?! Oh my goodness!! This is one of my favorite things ever. I cannot stand using a spoon in my sour cream, especially with kids, and my family eats a lot of chili, tacos, etc. We are often using sour cream, and this little bit of packaging genius keeps our sour cream neat, tidy, and delicious!
