What I learned being out of town for nearly 2 weeks & eating almost every meal either at the university or in a restaurant was that I LOVE to cook! I love to sit at my house with my family & eat food that I've cooked. I love being Pinspired with different recipes, and then adapting them to fit our tastes. It is a hobby that I love. What is even weirder is the fact that I am an extremely picky eater. I often don't eat what I like to cook, but I cook it anyways. 
Here are two easy recipes we've enjoyed so far this week. 

Baked Chicken Fajitas

  • 5-6 chicken breasts
  • 1 red bell pepper (cut into rings/strips)
  • 1green bell pepper (cut into rings/strips)
  • 1 yellow/orange bell pepper (cut into rings/strips)
  • 1 onion (cut into rings/strips)
  • 1 packet of taco seasoning
  • 1packet of fajita sauce (I used this sauce)
Preheat oven to 350 degrees. Sprinkle the chicken with the dry seasoning, and lay in a casserole or baking dish. Cover with sliced onions & peppers. Cover with fajita sauce. Bake for 25-30 minutes or until the chicken reaches 165 degrees. Slice chicken into strips.

Easy-peasy, and you end up with the most flavorful, juicy baked chicken. Often we aren't the biggest baked chicken fans due to the dryness, but by baking them in the sauce, you are assured super juicy chicken. We served these with flour tortillas, refried beans, Spanish rice, & guacamole.

I made the kiddos a couple of fajita chicken quesadillas, and they said they were the best ever!

Mississippi Roast

This is our absolute favorite crockpot meal...ever! I found it on Pinterest HERE! Y'all have to try it. This is the easiest, most delicious roast ever. My kids demand it often. I've tried every kind of roast cut out there, and our favorite cut of beef is the London broil. It is tender and has less fat normally! I would love to share an 'after' picture, but we ate all of it. I had hoped to enjoy some leftovers for lunch today, but it is all gone! 
This is what it looks like once all 5, (yes 5) ingredients are assembled. I served this with rice & peas, and it was such a filling dinner that required minimum effort!
