Tasty Thursday

I am so, so proud of my hubby!
He set his mind to a healthier lifestyle over the Fall, and he has flat worked it out!
He lifts every morning with the fellow coaches at his school, and he's just devoted to healthier food. Today I wanted to share one of his favorite lunches that we prep a few days a week.
 

Yummy Spinach-Chicken-Veggie Wraps

 
What you'll need:
1lb ground chicken
1tbsp olive oil
Salt & pepper to taste
Spinach tortilla wraps
Veggies, any combo that you like. (This version has bell peppers and mushrooms)
Sriracha Ranch

Chop your veggies to bite-sized pieces.
Saute the veggies in olive oil until they are soft.
Season with salt and pepper.

I remove them and then brown the chicken in the same oil and yumminess that the veggies left behind.
 Mix together.
We then portion this combo out, and Joe takes Tupperware to school with him.
 This is Joe's new favorite thing ever!
He is buying all of the sriracha, and it's hilarious.
It's as though his entire world has been opened to another flavor profile!
 Wrapped & ready!
And voila!!
Lunch is served.
He said that after he heated his wrap a couple of the teachers commented on how yummy his food smelled.
He is the kind of person who can eat the same thing every single day, but it drives my batty. I'm searching everywhere for new food for him and our family to incorporate into our daily lives.
