I've been cooking up a storm lately, and I just had to share what we had for dinner last night!
Easy, quick, and oh so good. It was for sure a new family favorite!
Mini BBQ Meatloaves
What's in it..
- 2lbs lean ground beef [93/7]
- 2tbsp + more for topping BBQ sauce [Sweet Baby Ray's]
- 2 tbsp of onion powder
- 1tbsp garlic powder
- 1/2 cup parmesan cheese
- 1 egg
- 1 tsp bacon [cooked]
- 1/2 cup cheddar cheese
How it's made..
Toss everything in a bowl except the cheddar cheese and the extra BBQ sauce. Mix together until all ingredients are incorporated. Do not over mix it, or your meat loaves will be tough.
Spray your muffin tin with non-stick spray, and preheat the oven at 400.
Stuff muffin molds with the mixture, and bake for 20-25 minutes.
After it reaches safe beef temperature of 165 degrees, remove it from the oven and smother each muffin with BBQ sauce & cheddar cheese.
Bake an additional 5 minutes or until the cheese melts.
I served these scrumptious things with potatoes that I found in the produce section @ Wal-Mart.
These took 5 minutes in the microwave, and there were several different spices/sauces to add. They were pretty yummy as well!
..A couple of things about this dinner..
I do not like onions of any kind. It's a hereditary thing because my Grandpa was the exact same way. If we crunch in anyway an onion, then we get physically sick, but I love, love, love some onion powder. I'm the same way with similar veggies like celery & such! This recipe can substitute the same amount of minced onion for the onion powder.
The potatoes were good, but I think the other seasonings would work better for me. I'm not the biggest fan of powdered cheeses, but the garlic & olive oil sounded so much more my speed.
It was a pretty perfect weeknight meal because it cooks super quickly, and clean-up is pretty easy too. One muffin pan & one bowl for mixing is pretty much a dream for weeknight clean-up.
It's already been added to our dinner list!!
